In beef cattle, the short loin contains two main muscles: the tenderloin
and the top loin. Steaks (and roasts) from the short loin can be tenderloin
only, top loin only, or a combination of the two. These muscles,
located on the upper back between the sirloin (towards the rear) and the rib
section (towards the head) are not heavily used. As a result, the meat
is tender, flavorful, and juicy. T-Bone Steak
What makes the T-Bone
steak so popular is that it's really two steaks in one. The larger
side of the cut is a New York Strip from the center of the loin. The
smaller side is a tender Filet Mignon.

Filet Mignon
Filet Mignon
steak is pure tenderloin, cut from the small most-tender end. Filet
Mignon is prized for its lean, lightly-marbled texture and for its mild
taste. Because of its leanness, chefs often wrap bacon around a Filet
